What started as a side dish at a sandwich shop in Londonderry, New Hampshire in 2015 — hand-sliced potatoes fried in a countertop fryolator — is now processing over 100,000 pounds of Russet potatoes every week, sourced from family farms in Aroostook County, Maine.
